Dhalcha




Dhalcha is a gravy for mutton biryani in south Tamil Nadu. This dish si very nutritious and also very tasty.


Ingredients:-

Channa Dhal - 1/2 cup
Tuar Dhal - 1cup
Bone Mutton - 1/4 kg.
Onion - 1 chopped
Tomatoes - 6 Chopped
Green Chilli  - 3
Ginger, garlic paste - 3 tsp
Garam Masala - 1/4 tsp
Brinjal - 5 Cut medium
Bottle Gourd - 1 cut in medium size
Turmeric Pdr., - 1/2 tsp
Tamarind - Size of big marble (soak it and take extract)
Red Chilli pdr., - 1 to 2 tsp
Coriander pdr., - 1 1/2 tsp
Oil - 3 tbl. sp
Hing - 1tsp
Salt as required

For Garnishing :-

Finely cut mint leaves few
Finely cut coriander leaves few

Method:-

Pressure cook wash channa dhal and tuar dhal along with turmeric pdr, hing and little oil tomatoes and keep aside.

Wash bone mutton. Heat oil in pressure pan add onion. fry till it transparent.

Add 1 tsp of ginger garlic paste fry till its raw smell goes out.

Add bone mutton and little turmeric pdr., water 2 to 3 cup, little salt mix well. Cook till 3 to 4 whistle in completely reduced flame

After removing the lid, add brinjal, bottle gourd, green chilli, red chilli pdr, coriander pdr., remaining ginger garlic paste, mix well. Cook until the vegetables become soft. Add cooked dhal and tamarind extract salt. Add garam masala. Cook for 10 min. Garnish with mint leaves and coriander leaves.

Serve hot with any Pulav or Biryani
